DELICIOUS RECIPES

It's always nice to have a new recipe that is referred by friends to try with your family. You'll find many new recipes here and you'll want to keep coming back as the library grows! So, when you're stuck and can't think of anything to make for dinner or for a party, come on back and we'll have something new for you to try!

Salad Nicoise

Salad Niçoise (pronounced nee-swaz) is essentially a French composed salad, much like our American Cobb salad, but with tuna, green beans, and potatoes, instead of chicken, bacon, and avocado. Salad Niçoise hails from Nice, on the Mediterranean Sea, though like so many foods we enjoy here of French origin, has changed a bit to adapt to our tastes.



Ingredients:
1 pound steamed green beans (steamed lightly, beans should not be soggy)
1 pound small red potatoes
4 hard boiled eggs, quartered
1 can premium tuna
¼ cup minced fresh parsley
¼ cup minced fresh basil
½ cup kalamata olives, pitted
1 cup cherry tomatoes 1 thinly sliced red bell pepper

Dressing:
¼ cup Dijon mustard
¼ cup red wine vinegar
½ cup olive oil
2 cloves minced garlic
Mix well and set aside.

Salad:
Boil red potatoes for 25 minutes or until cooked through. Rinse potatoes in cold water and put in refrigerator to cool. Once potatoes are cooled slice in quarters. Leave skin on. This step can be done the night before to allow potatoes to cool thoroughly before slicing.

Begin by lining the salad bowl with steamed green beans. Next place a layer of red potatoes on top of green beans. Next place hard boiled egg quarters on top of potatoes. Sprinkle half of parsley and basil on top of eggs. Place tuna on top of herbs. Put tomatoes or red peppers on top of tuna. Sprinkle kalamata olives on top of tomatoes/peppers. Garnish with the remainder of the basil and parsley.

Allow each person to dress their own salad.
